CHERRY ALMOND BAKED OATMEAL


 CHERRY ALMOND BAKED OATMEAL




Almonds and tart cherries are our favorite winter oatmeal. Tart cherries are harvested in the summer, but due to their delicate nature, they are immediately dried or frozen to retain their grandeur.

 

Ingredients:

  • 100g (1/3 cup) of fat free vanilla or plain yoghurt
  • 60g of frozen dark cherries 
  • 1/4 tsp of almond extract
  • ½ tsp of baking powder
  • 2 tsp of of Sukrin Gold
  • 5g of sliced almonds
  • 40g (1.5oz)  of oats
  • 1/2 tbs of sukrin:1
  • 1 large egg
  • spray oil

 

Instructions:

  1. Preheat oven to 190c/375f
  2. Grease a small oven proof dish with spray oil
  3. Add to a bowl - the oats, sukrin:1, ½ tsp of baking powder, yoghurt, almond extract and egg and whisk to combine
  4. Add the cherries to the oven dish and sprinkle with 1 tsp of Sukrin Gold
  5. Pour over the top with the oat mixture, sprinkle with the sliced almonds
  6. Sprinkle with the remaining Sukrin Gold
  7. Bake in the oven for 40 mins till set and lightly golden. Enjoy your breakfast!
