 SWEET POTATO, SPINACH & BUTTER  BEAN STEW




The Spicy Kale and Sweet Potato Butter Bean Stew is a rich and warming vegan stew. Tasty, filling and nutritious, it's a serious vegan comfort food.

 

Ingredients:

  • salt & pepper
  • 2 Tbsp olive oil
  • 2 tsp ground cumin
  • 3 tsp smoked paprika
  • juice of 1 to 2 lemons
  • 500ml vegetable stock
  • 2 tsp ground coriander
  • 1.25 kg sweet potatoes
  • 4 garlic cloves (crushed)
  • 260g young leaf spinach
  • 2 x 400g can butter beans
  • large bunch of fresh coriander
  • 4 x 400g can chopped tomatoes
  • 2 medium onions (finely chopped)

 

Instructions:

  1. Peel sweet potatoes and cut in 1cm dice.
  2. Heat olive oil in a large casserole pan.
  3. Add finely chopped onion, crushed garlic, ground cumin, ground coriander and smoked paprika. Cook until onion is soft.
  4. Add diced sweet potatoes, chopped tomatoes and stock.
  5. Bring to the boil, then cook half covered until sweet potatoes are tender (they should still have a bite).
  6. Stir in spinach. Cook for 2 minutes. Add rinsed and drained butter beans. Cook for another 2 minutes to warm them through.
  7. Season to taste with lemon juice, salt & pepper.
  8. Serve with plenty of chopped fresh coriander leaves sprinkled over. Enjoy your healthy food!
