PINEAPPLE COCONUT DESSERT BARS







These pineapple and coconut breadcrumb bars are easy, sweet, and taste like a tropical dessert. The crispy coconut breadcrumb garnish and the gooey pineapple garnish make an irresistible combo.

Ingredients:

Crust
  • 1/2 cup butter
  • 1 cup all-purpose flour
  • 1 cup brown sugar
  • 1 cup coconut (shredded)

Filling
  • 1 tbsp butter
  • 3 tbsp cornstarch
  • 1 tbsp lemon juice
  • 3/4 cup granulated sugar
  • 14 oz pineapple (crushed, with juice)


Instructions:
  1. Preheat the oven to 350F
  2. Grease an 8×8 baking dish
  3. In a medium mixing bowl, combine all crust ingredients, using a pastry blender
  4. Press 2/3 of the crust mixture into the greased dish
  5. In a medium saucepan, whisk all of the filling ingredients
  6. Bring to a boil, stirring constantly so it doesn’t burn
  7. Cook for about 5-7 minutes, until it starts to thicken
  8. Remove the pan from the heat and let it cool slightly
  9. Pour the pineapple mixture over the crust
  10. Sprinkle with the remaining crumble
  11. Bake for about 25-30 minutes, until the topping is golden brown. Enjoy your dessert!
