SPINACH FETA MUFFINS


SPINACH FETA MUFFINS





For a quick and easy savory snack, these spinach and feta muffins are perfect. Filled with tasty and nutritious ingredients, eat them on the go or take them to school lunches.

Ingredients:
  • 250g flour
  • 300 ml milk
  • 80 ml olive oil
  • 1 teaspoon salt
  • 2 eggs, beaten
  • 180g feta cheese 
  • 3 teaspoons baking powder
  • 200g frozen spinach, thawed


Instructions:



  1. Line your muffin pan with paper cups and cut the feta cheese into small chunks.
  2. Preheat the oven to 180°C.
  3. In a bowl mix flour, baking powder and salt. In another bowl combine spinach, eggs, olive oil and milk. Add in the flour mixture and be sure not to overmix. Fold in the feta cheese cubes.
  4. Pour dough into the muffin pan and bake for about 20 minutes. Enjoy your cake!
