CHOCOLATE CHIP BANANA STREUSEL BAKED OATMEAL



Oat porridge topped with a touch of dark chocolate. A healthy and comforting breakfast.


Ingredients

For the Oatmeal
  • 1 egg
  • 1/4 cup honey
  • 1 1/2 cups milk
  • 1/2 teaspoon salt
  • 2 cups quick oats
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup mashed banana
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 cup mini chocolate chips

For the Streusel
  • 1/4 pecan chips
  • 1/4 cup quick oats
  • 2 Tablespoons flour
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 2 Tablespoons melted butter


Instructions
  1. Preheat the oven to 350 degrees. Spray an 8x8 baking dish with non-stick spray.
  2. Whisk together the milk, honey, egg, vanilla, and banana.
  3. Stir the oats, cinnamon, nutmeg, baking powder, salt, and chocolate chips into the milk mixture. Pour into the prepared pan.
  4. Stir together all the streusel ingredients until it resembles wet sand. Spoon it evenly over the top of the oatmeal mixture. Bake for 45 minutes.
  5. Remove and let cool slightly. Serve with milk, honey, and chocolate chips, if desired. Enjoy your breakfast!
