PEAR AND ALMOND IMPOSSIBLE PIE




This impossible pear and coconut pie gets its name from the fact that it is impossible to go wrong! This dessert pie is quick, easy, sweet and fruity!


INGREDIENTS
  • 3/4 cup caster sugar
  • 1 cup full cream milk
  • 4 large eggs, lightly beaten
  • 1/2 cup shredded coconut
  • 1/2 cup flaked almonds
  • 2 tablespoons golden syrup
  • 1 teaspoon ground cinnamon
  • 1/2 cup plain (all purpose) flour
  • 410g (14 ounce) can pear slices in natural syrup, drained and chopped
  • 125g (4 1/2 ounces) butter, melted


INSTRUCTIONS
  1. preheat oven to 180c  (355f) on bake, not fan forced 
  2. lightly butter a 24cm (9 1/2 inch) pie dish
  3. sift flour and cinnamon together into a large bowl
  4. add sugar, coconut, milk and beaten eggs, melted butter,  and syrup and mix to combine
  5. fold through chopped pear pieces
  6. pour into prepared dish
  7. sprinkle with almonds
  8. bake for 35-40 minutes until golden brown and set
  9. remove from oven and serve either hot, or cold. Enjoy your cooking!
