LOW CARB MUSHROOM & SPINACH CAULIFLOWER RICE


This spinach and mushroom cauliflower risotto is the best low-carb alternative.


Ingredients
  • 3 cups sliced mushrooms
  • soy sauce
  • 1 tbsp olive oil
  • 2 cups spinach
  • 1 tbsp soy sauce
  • 1/2 cup chopped onion
  • 10 oz frozen riced cauliflower
  • 2 minutes garlic cloves


Instructions
  1. Cook cauliflower rice according to instructions on the package.
  2. Heat olive oil in a skillet and add onions and cook until soft.
  3. Toss in mushrooms and saute until cooked.
  4. Now add garlic, and stir.
  5. Add cauliflower rice and soy sauce. Stir until cauliflower rice has absorbed soy sauce.
  6. Top mixture with spinach, stir and cook until wilted. Enjoy your cooking!
