CHEESY ONE POT EMPANADA RICE


EMPANADA RICE CHEESE JAR so easy and delicious. Do not underestimate, it is quite versatile and makes a delicious empanada.


Ingredients
  • 3 tsp salt
  • 2 tsp pepper
  • 2 tsp oregano
  • 4 cloves garlic
  • 1 cups white rice
  • 1 lb ground beef
  • 1 cup tomato sauce
  • 2 cups vegetable broth
  • 1 yellow onion, diced
  • 2 tsp minced hot pepper (optional)
  • 8–10 sliced Spanish olives
  • Optional Garnish:
  • chopped cilantro
  • shredded cheddar cheese


instructions
  1. In a large saucepan, brown the ground beef with the diced onion, breaking up the meat with a spatula. Once the beef is browned, add minced garlic cloves and hot pepper.
  2. Add oregano, salt, pepper, tomato sauce, broth, olives, and rice. Bring to a boil, then cover, and lower to a simmer for 20 minutes.
  3. Garnish with cheese (optional) and cilantro! Enjoy your cooking!
