Parmesan Crusted Tilapia

Parmesan Crusted Tilapia is a light, crisp and delicately flavoured dish that takes less than 20 minutes to make. Your family will love how it tastes and you will love how quick and easy it is!
This parmesan tilapia is coated in a simple crust and pan fried for a few minutes on each side.  This easy meal is perfect served with your favorite slaw or a fresh Kale Salad with Lemon Dressing.


·         6 tilapia fillets defrosted if frozen
·         2 eggs
·         4 teaspoons dijon mustard
·         2 Tablespoons water
·         2 Tablespoons butter
·         1 Tablespoon olive oil
·         lemon slices for serving

·         1 1/2 cups Panko Bread Crumbs
·         1 cup cornflake crumbs
·         1/2 cup fresh grated parmesan cheese
·         1 teaspoon parsley flakes
·         1/2 teaspoon each salt & pepper
